“Even while living abroad, the Kiel-based diplomat Fried Nielsen is reluctant to give up the traditional cuisine of Schleswig-Holstein. He has dedicated a book to the food of his homeland: in Hauskochbuch (‘Home Cookbook’), he captures the flavours of his childhood. The slim volume feels pleasant in the hand and is attractively bound. Its linen cover glows as green as the lush meadows of the region, while the inside is as dark brown as the fertile marshlands. At the latest, the discreet blue-white-red tricolour made from authentic flag fabric reveals, with a wink, where the recipes in Fried Nielsen’s Hauskochbuch come from: Schleswig and Holstein.”

„Der Kieler Diplomat Fried Nielsen verzichtet auch in Ausland ungern auf schleswig-holsteinische Malzeiten. Dem Essen seiner Heimat hat er ein Buch gewidmet: Im „Hauskochbuch“ fängt er den Geschmack seiner Kindheit ein. Der schmale Band führt sich gut an und ist appetitlich eingeschlagen. Sein Leinendeckel leuchtet so grün wie saftiges Wiesenland, und die Innenseite ist so dunkelbraun wie die fruchtbare Marsch. Spätestens die dezente blau-weiß-rote Trikolore aus echtem Fahnenstoff verrät augenzwinkernd, woher die Rezepte in Fried Nielsens „Hauskochbuch“ stammen: aus Schleswig und Holstein.“
